It’s no secret I love Breakfast for Dinner and the other day the stars aligned so perfectly that breakfast was our only option for our evening meal.

Days earlier at the grocery store, I couldn’t pass up ripe, local peaches—fresh from a nearby farm, right at the peak of end-of-summer peach season.  They had been sitting on my counter just waiting for the right kind of culinary inspiration to come along.

Then, later that week on that fateful day, we made braided Challah bread at work.  I knew I had to take one home (you know, quality assurance, and all that) and find a good use for it.  And then I remembered the peaches.  The answer was clear—Challah French Toast with Fresh Peach Topping.

Breakfast for Dinner is often more decadent than regular dinner—bacon, syrup, maybe a cinnamon bun or a sprinkling of powdered sugar here and there—but I think I was able to incorporate many of the criteria of our usual dinners into this meal: healthy cooking method, fresh ingredients, heaping portion of fruits/veggies.  Plus, I love when I’m able to fabricate a dinner out of ingredients I already have on hand, even if I knew those peaches were already destined for something special!

To cook the French toast, we whisked eggs (you’ll need about six for a full loaf of thickly sliced bread, and really, any bread will do) with milk, salt, pepper, and cinnamon.  After dunking each slice of bread in the egg mixture, simply brown in a heated non-stick frying pan, no butter or oil needed.

For the peach topping, I cut up fresh peaches into slices (each of us got the equivalent of two peaches with dinner, a great serving in my opinion!) and browned them in another frying pan with a little bit of butter, a few spoonfuls of sugar, cinnamon, and nutmeg.  I cooked the peaches until they softened and the sauce created by the sugar and the juices from the peaches thickened.

We then simply topped a few slices of Challah French toast with the peach topping.  Unlike other types of French toast we’ve made, we didn’t need any syrup or butter to enhance the flavors of the meal.  The simplicity of this dish spoke for itself!
