As Jake is getting older, I’m finding more and more ways to have him help me out in the kitchen. I’ve always loved cooking and baking, and pre-kids, my oven had quite the workout. Last weekend I had the chance to try out a new recipe with him, and WOAH was it a big hit! And Mommas- it is super easy, and I’m willing to bet you already have every single ingredient in your kitchen at this very moment! Enter, Pancake Mix Muffins!! Jake helped out by stirring the batter and scooping a tablespoon of the mix into mini muffin tins. While we waited the 15 minutes for them to bake in the oven, he got to stir the cinnamon and sugar used to toss the muffins in, fresh out of the oven. It was a win win for all- I got to get my bake on, and he got to do his favorite thing- mixing up batter with a huge spoon. Livvy even got in on the action, and couldn’t wait to get her four teeth into a little muffin.
Trust me- this recipe will not disappoint!
Pancake Mix Muffins
2 cups instant pancake mix
1/2 cup sugar
1 1/4 cup water
1 Tbs vanilla
A few shakes of Cinnamon
Plus, 1/2 cup sugar and 1 Tbs of cinnamon mixed together
Preheat oven to 350 degrees. Grease the cups of mini muffin tins. Combine pancake mix, sugar, water, vanilla, and a few shakes of cinnamon. Stir. Fill mini muffin cups half way with the batter. Bake for 15 minutes. Take muffins out of the tin, and while still warm, toss in the cinnamon and sugar mixture.
