Easter Bunny Cake



Can Easter even happen if there is no bunny cake?  Like, if a tree falls in the forest and no one is there to hear it, does it make a sound?  Don’t worry, fellow harried, busy working mom- you too can make Easter happen this year with an official Easter bunny cake!

Got a sick kid and deadlines to meet at work?  Are you running to Walgreen’s on the way home tonight after work to get Cadbury Cream Eggs, Mini Eggs, and Reese’s Peanut Butter Eggs?  Well, guess what?  You can whip up this little gem in NO TIME!  Well, with time to spare to actually fill up those easter baskets and nibble off the end of a carrot on Saturday night.  This method will get you TWO Easter Bunny Cakes!

So, while you’re picking up your last minute basket supplies, grab these, too:

1 box of cake mix (and make sure you have eggs and oil to make the cake)

2 containers of white frosting

2 bags of coconut

1 bag of jelly beans

YEP. That’s it.  Prepare your box of cake mix, and bake in two round cake pans according to box directions.  Once the cakes are cool, slice them in half.  On one half, spread frosting, and place the other half on top.  Stand the cake up on the flat, cut side, and cover it in frosting.  Repeat with the other cake.   Cover the cakes in coconut, and add eyes and a nose with the jelly beans.  Then, cut out ears from white construction paper, and place them on your bunny.  If you’re feeling extra festive, dye the rest of your coconut green, and toss it around your bunnies to make it look like grass, and scatter the jelly beans around.  Voila!  You now have made Easter happen.  Grab yourself a glass of wine, put your candy eggs in the basket, and snap a selfie with your finished product.  #EasterBunnyIsReal #BunnyCake #MomWins
