Whoah, Wait- do not adjust your screen. You really did see the title of this post as, “The Best Pumpkin Cookies Ever.” And I’m being totally serious here. They literally ARE the best pumpkin cookies ever! Let me rewind for a minute here. When I was in law school, I was clerking with the Southern Connecticut Gas Company. One October Friday of my internship, I decided to spice things up a bit, and bring a plate of homemade cookies into the legal department. I knew they needed to be pumpkin, it was the height of the fall baking season, and they had to be easy, and quick- a 2L law student juggling classes and Moot Court brief writing is no easy task! I did a quick internet search (to all of those old gals like myself, this was the pre-Pinterest era where we had to rely on the kindness of bloggers, the food network online, and whatever else came up in a Google search engine to find recipes).
My search yielded My Mother’s Pumpkin Chocolate Chip Cookies from Boston.com, The Boston Globe’s web page offshoot. Hmm… I was intrigued. I mean, moms are generally the last word on the matter when it comes to cookies. I clicked. I printed. And I Baked. Let me tell you, YEAH. These are pretty much the best pumpkin cookies out there. And, added bonus, they are fairly healthy, and down home cooking GOOD! Busy, exhausted, and strung out Momma in me is pretty much the same overworked 2L law student that I once was, so these quick and easy cookies come in pretty handy this season! I’ve already baked these up twice this month, and please both kids and adults alike! You probably have all of these ingredients in your kitchen right now, and you are pretty much tripping over cans of pumpkin puree at every single grocery and big box store. So buy a can, pre heat your oven, and have your kids help you stir and scoop onto a cookie sheet. Trust me- You’ll thank me later!
