Phoning it in at Dinner Time

It’s Summer.  It’s HOT.  And I really, really, really, REALLY do not want to cook or prepare meals outside of the daily lunch boxes that accompany the kids to preschool.  I’m phoning it in, and frankly, Scarlett, I don’t give a damn.  (It’s too hot to give any damns).  TOO HOT.

Last week I prepared an amazing one pot meal that lasted us for days- the kids ate it at night for dinner, and brought it to school in their little thermoses.  A one pot wonder, if you will.  Guy Fieri’s American Chop Suey, which I made with ground chicken and turkey was easy, and a huge hit!

For Mike and I, we ate a more “Adults Only” meal for dinners and lunches last week- Ree Drummond’s Asian Noodle Salad.  The Pioneer Woman knows her stuff when it comes to this dish-  IT IS HUGE.  You’re going to have to find your biggest bowl ever, and then go back and find a BIGGER one to make this.  But trust me- you’ll be loving yourself for days as you eat this noodle salad right out of the fridge and don’t have to turn your oven on!  I ate it as is, but Mike ate it with a helping of Crock Pot BBQ Pulled Chicken that I made- again, totally effortless.  (and delicious).

Tonight, though?  True confessions? It’s even too hot for the microwave.  Tonight, the drive through at McDonald’s will be my personal chef- grilled chicken salads for Mike and I, and Happy Meals for the kids.  Everyone gets a toy, and everyone is happy.  (And enjoying their dinner in the comfort of the air conditioned kitchen, thankyouverymuch).

  2. OH MAN. I am soooo trying that asian noodle salad. That looks fantastic!! I agree– we’ve had “hummus night” here WAY too often lately because I just cannot cook in this heat. Thanks for some new recipes!! (P.S. last night we had hot dogs on hamburger buns because I didn’t make it to the store, and watermelon with popcorn. I’ve sunken to new culinary lows over here, so this was timely hahaha)
